The Ramen Menu

Paitan -creamy chicken soup, chicken charsiu, bamboo shoots, egg

Paitan (白湯) is the word that originated from the Chinese word for white soup. The Chinese pronunciation (Mandarin) is more like ‘baitan’. The uniqueness of Chicken Paitan Ramen is the milky white broth (paitan broth) made from chicken bones and chicken feet. (Source)

Shio -clear chicken soup season with salt, pork belly charsiu, bamboo shoots, egg

Shio ramen is one of the most common and classic forms of ramen noodle soup. At its core, Shio ramen is simply a clear broth ramen soup, heavily seasoned with salt, which is what Shio means in Japanese. Shio ramen is usually lighter and brighter, with more delicate flavors. (Source)

Classic Shoyu -clear chicken soup seasoned with soy sauce, pork belly charsiu, bamboo shoots, egg

Shoyu ramen, like shio ramen, is a more classic or traditional ramen broth, and it is by far the most common ramen style you'll see in ramen shops or stands today. Made from a rich, bonito flavored broth and spiked with a touch of dark soy sauce, this hyper addictive broth is packed with umami flavor. Shoyu means soy sauce in Japanese, and that is where this ramen style gets its name. (Source)
